I think 60 years on from that, I don’t — there are some like there’s a fantastic Suzhou bakery in this food street in Taiwan where they make really traditional Suzhou pastries. But a lot of it is a mixed up version of Chinese. Not to say there’s not excellent — Taiwan’s a fantastic place to eat. In China, sometimes it is difficult to find the real old-school cooking. That’s why what the Dragon Well Manor restaurant is doing is so important. It’s recruiting retired chefs to teach the younger generation the old skills. What is the dish in your cookbooks that is a place you would tell beginners to start? What is a dish that they will be capable of making, and the results will hook them?…
