I think gong bao chicken is a really good introduction to stir frying because it’s not complicated. It doesn’t have many stages. You can assemble all your ingredients in little bowls first, and then they just go one by one into the wok. It’s a knockout flavor. Everyone likes chicken. There’s no bones in it. A bit of spice. Lovely layering of flavors. That’s one dish that I think people are surprised to find how straightforward it is and it’s addictively tasty. As we all know you have been to China many times.
